Korean Style Bbq Bowls

Ingredients:

To Serve
  • 2-3 cups cooked brown rice
  • 1 large carrot, julienned
  • 1/2 telegraph cucumber, diced
  • 2 scallions, sliced
  • 1 cup kimchi
  • 1 red chilli, thinly sliced
  • 2 tsp sesame seeds
  • 3 Tbsp Kewpie mayonnaise

Instructions

  1. Place tofu on a paper towel-lined plate or board. Cover with more paper towels and place a heavy pan or board on top for 5 minutes, to press out excess water from tofu.
  2. Prepare serving ingredients (adapt to your liking).
  3. Dice tofu into small cubes (1/2 – 1 inch) and place in a large bowl. Season with salt and pepper. Add three quarters of the marinade and toss gently to coat.
  4. Heat oil in a large, high-sided skillet on medium high. Fry tofu, turning occasionally and basting with extra marinade as needed, until crispy, sticky and golden.
  5. Build your bowl using rice and veggies, then top with the tofu. Sprinkle with sesame seeds and add a dollop of mayonnaise.
Meaty Option
  • Swap the tofu for the same quantity of steak (use rump, flank or sirloin). Skip step 1. For step 3, thinly slice the steak instead of cubing. Top with a fried egg before serving!
