Preheat oven to 350ºF bake. Place fish in an oven-safe dish and bake for 15 minutes (or until cooked to your liking), basting with marinade and pan juices halfway through.
To make salad, place lettuce, bell pepper, carrot, scallions, mint and cilantro in a large bowl. In a small bowl, whisk together Barker’s Lime Chili Sauce & Marinade, oil and sugar. Season with salt and pepper to taste. Drizzle over salad and toss to combine. Sprinkle with cashews.
